If you’re looking for a rich, creamy and delicious Makhana Kheer, the best version is made by ghee-roasting the makhana, grinding part of it for thickness, and simmering it in full-fat milk with saffron, cardamom and nuts. This gives a naturally creamy, almost rabdi-like texture.

🥣 Best Makhana Kheer

Ingredients — serves 2–3

  • 1 cup makhana (fox nuts)
  • 2½ cups full-fat milk
  • 2–3 tsp ghee
  • 3–4 tbsp sugar or mishri
  • 8–10 cashews, chopped
  • 8–10 almonds, sliced
  • 1 tbsp raisins
  • 3–4 cardamom pods, powdered
  • 5–6 saffron strands
  • 1–2 tbsp chopped pistachios

Method

  1. Roast makhana in ghee on low heat until crisp.
  2. Crush or grind about ⅓–½ of the makhana into a coarse powder.
  3. Bring milk to a gentle boil, then add the makhana powder and whole roasted makhana.
  4. Simmer on low heat for 10–15 minutes, stirring regularly.
  5. Add sugar, saffron and cardamom.
  6. Add roasted cashews, almonds and raisins.
  7. Cook another 3–5 minutes until thick and creamy.
  8. Garnish with pistachios and saffron. Serve warm or chilled.

⭐ Secret for the BEST taste: Don't grind all the makhana. Keep some pieces whole for a lovely soft, chewy texture while the ground portion naturally thickens the kheer.

Premium twist: Add 1–2 tablespoons of khoya/mawa near the end for an extra-rich, festive version.
